With Summer coming (we can almost feel it!), the evenings are getting lighter and gatherings with friends are filling our social cards. Prosecco is a wonderful, light alternative for a midday tipple and this beautiful cocktail is garnished with bursts of pomegranate and fragrant fresh mint and only takes a moment to whip up. It looks absolutely stunning in vintage style champagne glasses and is sure to get a good reaction from your guests!

Pomegranate has such a short season so it’s wonderful to enjoy it while it’s here, it really adds flair to your salads and drinks, the seeds are like little gems of flavour.”

Try these beautiful cocktails…

Ingredients:
  • Bottle of your favourite Prosecco
  • Raspberry Sorbet
  • Pomegranate seeds
  • Fresh mint to garnish

Method:

Add a scoop of raspberry sorbet to the centre of your glass. Sprinkle with pomegranate seeds, slowly pour over your Prosecco and finish with mint leaves.
