Panko Crumbed Rosti with Salmon & Dill Aioli Brunch

Panko Crumb Rosti with Asaparagus, hot smoked salmon and dill aioli

With Labour Weekend coming, what better way to fill your lazy mornings with a delicious brunch? This Panko Crumb Rosti forms the base of this dish, and works best when you have left over mashed potato from the night before. With minimal time to assemble, you can get out and enjoy your weekend doing what you love. Enjoy!

 

Serves 4

 

Ingredients

 

  • 800g Mashed Potato
  • 150g Panko crumbs
  • 6 free range eggs
  • 1/2 cup flour
  • 1 spring onion
  • 2 Tablespoons cream cheese
  • 200g hot smoked salmon
  • 1 cup fresh dill
  • 1 cup store bought aioli
  • 1 fresh lime
  • 1 bunch of fresh asparagus
  • 1 cup of rocket
  • 1 cup of oil for frying
  • Salt and pepper to taste

 

Method

 

Add sliced spring onions and cream cheese to mashed potato, mix together and form into patties. In a bowl whisk 3 of the eggs with salt and pepper. Lightly dust the patties with flour, place in bowl and cover with beaten egg, removing carefully then cover in panko crumbs to make your rosti.

 

With the 4 remaining eggs, place in a pot of boiling water for 6 minutes. Heat oil in another pan and fry potato rosti on each side until golden brown. Lightly steam your asparagus.

 

Add fresh dill (leaving some for garnish) and half the lime juice to your Aioli, mix together. Slice boiled eggs in half.

 

To assemble

 

Place your cooked rosti in a large bowl and start layering with rocket, asparagus, hot smoked salmon, boiled eggs. Drizzle with aioli and garnish with fresh dill and lime.
